Zucchinikuchen – Zucchini (Courgette) Cake

Ingredients
2 cups zucchini (courgette), shredded
2 cups sugar
3 cups flour
1 cup oil
3 eggs
1/2 cup ground hazelnuts
1/2 cup sliced almonds
Directions
Grease baking pan and cover butter with the almond slices. Mix eggs, sugar and oil for about 5 – 7 minutes until double in size. Add the zucchini (courgette), flour and hazlenuts, and stir just enough to combine.
Pour batter into pan and bake at 350F / 180C / Gas Mark 4 for 40 – 50 minutes depending on the size of the pan. Sprinkle with icing sugar and serve.
