Krautsuppe – Cabbage Soup

Serves: 6-8

Ingredients

1/2 head green cabbage
1 medium onion, finely chopped
1 teaspoon caraway seeds
1 bay leaf
2 tablespoons vegetable oil
8 cups stock, broth or water
4 tablespoons sour cream
2 teaspoons salt
1/2 teaspoon pepper
1 cup brown bread croutons
2 tablespoons chopped chives or parsley

Directions

Remove stalk and outer leaves from cabbage and chop into 1/2 inch pieces. In a large pot, fry the onions in the oil, then add the chopped cabbage. Fry for another few minutes, then add the stock, broth or water.

Season with caraway seeds, bay leaf, salt and pepper and bring to the boil. Cook for 30 minutes.

Season to taste and add sour cream. Do not bring to the boil! Ensure that soup is piping hot and serve with croutons and chopped chives or parsley.
