Knoblauchcremesuppe – Creamy Garlic Soup 2

Serves: 4

Ingredients

6 – 8 cloves garlic, peeled and chopped
1 small onion, peeled and chopped
2 tablespoons butter
2 tablespoons all-purpose flour
3 cups stock, broth or water
2 tablespoons sour cream
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon sugar
dash of vinegar

Directions

In a saucepan, fry onion in melted butter on medium heat until golden. Add flour, stirring well. Add stock and garlic. Season with salt, pepper, sugar and vinegar. Bring to the boil and leave to simmer for about 20 minutes.

Pour the soup into a blender or food processor and mix well. Return it to the saucepan, and bring it back to the boil, stirring occasionaly so it doesn’t burn. Adjust seasonings if necessary. Add sour cream just before serving.

Garnish with a few croutons, and some chopped chives or parsley.
