Chicken Cordon Bleu
Ingredients
2 chicken breasts, halved
4 slices ham, ready to eat
4 slices cheese (mozzarella, cheddar, Swiss)
salt and pepper, to taste
6 teaspoons mayonnaise
1/2 cup breadcrumbs
Directions
Cut chicken breasts in half, pound with mallet until thin. Layer each piece of chicken with ham and cheese. Sprinkle with salt and pepper. Roll up with filling inside. Roll each chicken roll in mayonnaise, and then in breadcrumbs until lightly coated.
Arrange them, seam side down, in a shallow nonstick pan, coated with cooking spray. Bake at 180C / 350F / Gas Mark 4 / for 30 – 40 minutes, until the chicken is cooked through and they are golden and tender.
