Shish Taouk – Lebanese Chicken
Ingredients
1/2 kg or 4 medium-sized chicken breasts, cubed
For the Marinade
2 cloves of garlic, crushed
1/2 teaspoon mixed spices
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon chili powder
2 tablespoons tomato ketchup
2 tablespoons lemon juice
2 tablespoons oil
3 tablespoons water
Directions
You can prepare the marinade ahead of time and refrigerate it for future use. If using chicken breasts, skin them cut them in small cubes.
Marinate the chicken cubes in all the above ingredients for at least 1/2 hour. To cook, place the chicken with the juices in an oven tray, cover with foil and cook in an oven preheated to 180 C / 325 F for 30 minutes.
Remove foil and stir. Return the tray to oven, cook uncovered for another 5-10 minutes or until the chicken is well cooked.
Serve with potato wedges, salad and Toum (Garlic Mayonnaise).
