Pumpkin Apple Streusel Muffins

Makes: 18 muffins

Ingredients for the Muffins

11 oz plain flour
14 oz granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
8 oz (425 g) can Libby's Solid Pack Pumpkin
7 tablespoons vegetable oil
2 apples, peeled and finely chopped

Ingredients for the Streusel Topping

2 tablespoons plain flour
2 oz sugar
1/2 teaspoon ground cinnamon
4 teaspoons butter

Directions for the Streusel Topping

Combine dry ingredients in a small, and cut in the butter until mixture is crumbly.

Directions for the Muffins

In large mixing bowl, combine flour, sugar, spices, baking powder and salt. Set aside.

In medium bowl, combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients, stir until just moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling each one about 3/4 full.

Sprinkle the Streusel Topping over batter. Bake in preheated oven at 180C / 350F / Gas Mark 4 for 35 - 40 minutes or until skewer comes out clean.

Variation

For 6 giant muffins, follow directions above, increasing baking time to 40-45 minutes.
